Servings: Serves 4 people

Appliances/Utensils:

Ingredients:

  • 2 medium zucchinis, thinly sliced
  • 2 large tomatoes, thinly sliced
  • 2 cups all-purpose flour
  • 1 packet (7g) instant yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ¾ cup warm water
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

1. Prepare the dough:

Mix the flour, yeast, salt, and sugar in a large bowl with measuring cups and spoons. Gradually add warm water and olive oil, stirring with your hands until a dough forms.

Let rest for 10 minutes.

2. Roll out the flatbreads:

Divide the dough into four portions. On a floured cutting board, use a rolling pin to roll each portion into a thin oval shape.

3. Preheat the oven:

Set your oven to 400°F (200°C). Place a baking sheet inside to heat.

4. Cook the vegetables:

In a large frying pan, heat a tablespoon of olive oil over medium heat. Add the zucchini slices and cook for 3-4 minutes until slightly softened. Remove from the pan and set aside.

5. Assemble the flatbreads:

Remove the heated baking sheet from the oven. Place the rolled-out dough on it. Top each flatbread with zucchini, tomato slices, mozzarella cheese, and a sprinkle of dried oregano.

Season with salt and pepper.

6. Bake:

Place the baking sheet back in the oven and bake for 10-12 minutes, or until the cheese is melted and the edges of the flatbreads are golden brown.

7. Slice and serve:

Use a pizza cutter to slice the flatbreads into pieces and serve warm.

Tips and Suggestions:

  • For added flavor, drizzle some balsamic glaze over the flatbreads before serving.
  • You can add other toppings like olives or feta cheese for a Mediterranean twist.
  • To make the dish vegan, substitute mozzarella with a plant-based cheese alternative.

Serving Suggestions:

Serve with a fresh side salad or a bowl of soup for a complete meal. Garnish with fresh basil leaves for an extra burst of flavor.
