Ingredients

8 oz rice noodles
2 tbsp vegetable oil
1 block extra-firm tofu, drained and cubed
1 red bell pepper, thinly sliced
1 carrot, julienned
1 cup bean sprouts
3 green onions, sliced
2 cloves garlic, minced
1/4 cup roasted peanuts, chopped
Fresh cilantro, for garnish

Pad Thai Sauce:

1/4 cup tamarind paste
3 tbsp soy sauce
3 tbsp maple syrup
2 tbsp lime juice
1 tbsp rice vinegar
1/2 tsp red pepper flakes (optional)

Instructions

Prepare Noodles: Cook the rice noodles according to package instructions. Drain and set aside.

Make Sauce: In a mixing bowl, whisk together tamarind paste, soy sauce, maple syrup, lime juice, rice vinegar, and red pepper flakes. Set aside.
