Ingredients:

For the Salsa:

– Juice of 1 lime
– Salt and pepper to taste

For the Grilled Chicken:
– 2 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– Juice of 1 lime
– 2 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– Salt and pepper to taste

Instructions:

  1. Prepare the Marinade for the Chicken:
    • In a small bowl, combine the olive oil, lime juice, minced garlic, ground cumin, paprika, salt, and pepper.
    • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. Make the Salsa:
    • In a medium bowl, gently combine the diced strawberries, avocado, red onion, jalapeño, and cilantro.
    • Squeeze lime juice over the mixture and season with salt and pepper to taste. Gently toss to combine. Set aside.
