Appliances and Special Utensils

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • 1/2 lb linguine or other pasta (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Prepare Pasta: If serving with pasta, bring a medium saucepan of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. Heat Skillet: In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium-high heat.

  3. Cook Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2 minutes on each side, or until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

  4. Sauté Garlic: In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, or until the garlic is fragrant.

  5. Deglaze with Wine: Pour in the white wine (or chicken broth) and bring to a simmer. Cook for 2-3 minutes, allowing the liquid to reduce by half.

  6. Add Lemon and Butter: Lower the heat to medium and stir in the remaining 2 tablespoons of butter and the lemon juice. Stir until the butter is melted and the sauce is well combined.

  7. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet. Toss to coat the shrimp in the sauce. Season with salt and freshly ground black pepper to taste.

  8. Add Parsley: Stir in the chopped parsley, and if serving with pasta, add the cooked pasta to the skillet. Toss everything together until well combined.

  9. Serve: Serve the shrimp scampi immediately, garnished with additional parsley and grated Parmesan cheese if desired. Enjoy your delicious Shrimp Scampi!
