Servings: Serves 4 people

Appliances/Utensils:

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 2 ripe avocados, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 8 small corn tortillas
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, sliced (optional)

Instructions:

1. Prepare the shrimp by patting them dry with a paper towel. In a mixing bowl, combine shrimp, olive oil, cumin, paprika, garlic powder, cayenne pepper, salt, and pepper. Toss to coat the shrimp evenly.

2. Heat a large frying pan over medium heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Use kitchen tongs to turn the shrimp.

3. While the shrimp are cooking, prepare the avocado mixture. In another mixing bowl, combine diced avocados, chopped cilantro, lime juice (using a juicer), red onion, and a pinch of salt. Gently mix with a wooden spoon to combine.

4. Warm the corn tortillas in the large frying pan for about 30 seconds on each side or until they are pliable.

5. Assemble the tacos by placing a few shrimp on each tortilla, followed by a generous spoonful of the avocado mixture. Top with sliced jalapeños if desired.

Tips and Suggestions:

  • For a spicier kick, add more cayenne pepper or some hot sauce to the shrimp seasoning.
  • You can grill the shrimp instead of frying for a smoky flavor.
  • For a dairy-free option, omit any cheese toppings.

Serving Suggestions:

Serve these tacos with a side of Mexican rice or a fresh salad. Garnish with additional cilantro or a squeeze of lime for an extra burst of flavor.
