  • 1 lb Italian sausage (mild, sweet, or hot, as preferred)
  • 3 bell peppers (red, green, yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions

  1. Heat Pan: Place the large skillet or sauté pan over medium-high heat and add 1 tablespoon of olive oil.

  2. Cook Sausage: Add the sausages to the pan and cook until browned on all sides, about 7-10 minutes. Remove the sausages from the pan and set aside.

  3. Sauté Vegetables: Add the remaining tablespoon of olive oil to the pan. Add the sliced bell peppers and onions, and sauté until they begin to soften, about 5 minutes. Add the minced garlic and cook for an additional minute.

  4. Deglaze Pan: Pour in the chicken broth, stirring to deglaze the bottom of the pan and incorporate any browned bits.

  5. Add Tomatoes and Seasoning: Stir in the diced tomatoes, dried basil, dried oregano, salt, and black pepper. Mix well to combine.

  6. Combine and Simmer: Return the sausages to the pan, nestling them into the vegetable mixture. Reduce the heat to medium-low, cover, and simmer for 20-25 minutes, or until the sausages are cooked through and the flavors meld together.
