Instructions
- Prepare the Quinoa:
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a medium saucepan, combine the rinsed quinoa, 2 cups of water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and let it cool to room temperature.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, 1/2 teaspoon of salt, and black pepper. Set aside.
- Chop the Herbs and Vegetables:
- Finely chop the parsley, mint, and green onions.
- Dice the tomatoes and cucumber into small, even pieces.
- Assemble the Salad:
- In a large mixing bowl, combine the cooled quinoa, chopped parsley, mint, green onions, tomatoes, and cucumber.
