Ingredients:
– 1 lb beef tenderloin or sirloin, cut into strips
– 2 tablespoons soy sauce
– 1 tablespoon red wine vinegar
– 1 large onion, sliced
– 2 medium tomatoes, sliced into wedges
– 1 yellow chili pepper, sliced (optional for heat)
– 3 tablespoons vegetable oil
– 2 cloves garlic, minced
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)
– 1 lb French fries, cooked (store-bought or homemade)
– 4 cups cooked white rice


Instructions:
1. Marinate the beef strips in a mixing bowl with soy sauce and red wine vinegar. Set aside for 15 minutes.

  1. Heat the large frying pan over high heat and add 2 tablespoons of vegetable oil.

  2. Sear the marinated beef strips in the pan until browned. Remove and set aside.

  3. Add the remaining tablespoon of oil to the pan, then add the sliced onion and sauté until slightly softened.

  4. Stir in the garlic and yellow chili pepper, cooking for another 2 minutes.

  5. Return the beef to the frying pan and add the tomato wedges. Stir-fry everything together for about 3 minutes.

  6. Season with salt and pepper to taste, then garnish with chopped cilantro.

  7. Serve the Lomo Saltado hot over a bed of rice, with the crispy French fries on the side.
