  1. Preparation of Ingredients:
    • Soak the rice noodles in warm water for about 20 minutes until they are soft but still firm. Drain and set aside.
    • Mix the tamarind paste, fish sauce, and palm sugar together in a small bowl until the sugar is fully dissolved.
  2. Cooking:
    • Heat the oil in a wok or large frying pan over medium-high heat.
    • Add the shallots and garlic, and stir-fry until they start to brown.
    • Add your choice of protein (shrimp, chicken, or tofu) and cook until they are well done.
    • Push the ingredients to the side of the wok, crack the eggs into the center, and scramble until nearly cooked.
  3. Combining:
    • Add the drained noodles to the wok. Pour the tamarind mixture over the noodles and toss everything together. Stir-fry for about 2-3 minutes, or until the noodles are tender and well coated with the sauce.
    • Mix in the bean sprouts and half of the crushed peanuts.
  4. Serving:
    • Serve hot, garnished with the remaining peanuts, green onions, lime wedges, and a sprinkle of chili flakes if desired.
