Instructions:
1. Cut each mozzarella stick in half to create 24 shorter sticks.

3. Dredge each mozzarella stick in the flour, shaking off any excess.
4. Dip the floured mozzarella sticks into the egg mixture, allowing the excess to drip off.
5. Coat the sticks with the breadcrumb mixture, pressing gently to adhere.
6. Repeat the egg and breadcrumb steps for a double coating.
7. Place the coated mozzarella sticks on a cooling rack and freeze for at least 1 hour.
8. Heat the vegetable oil in a heavy bottomed pan over medium heat until it reaches 350°F (175°C).
9. Using kitchen tongs, fry the mozzarella sticks in batches for about 2-3 minutes or until golden brown.
10. Remove the fried sticks from the oil and place them on a cooling rack to drain any excess oil.
