Ingredients

Mussels:
– 4 pounds fresh mussels, cleaned and debearded
– 2 tablespoons olive oil
– 2 shallots, finely chopped
– 4 cloves garlic, minced
– 1 cup dry white wine
– 1 cup chicken or vegetable broth
– 2 tablespoons fresh parsley, chopped
– 1 tablespoon fresh thyme leaves
– 1 bay leaf
– Salt and pepper to taste

Frites:
– 4 large russet potatoes
– Vegetable oil for frying
– Salt to taste

Instructions

1. Prepare the Frites:
1. Peel the potatoes and cut them into 1/4-inch thick sticks.
2. Rinse the potato sticks in cold water to remove excess starch, then pat them dry with a clean kitchen towel.
3. Heat the vegetable oil in a deep fryer or large pot to 325°F (163°C).
4. Fry the potatoes in batches for about 4-5 minutes, or until they are pale and soft. Remove from the oil with a slotted spoon and let them drain on paper towels.
5. Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes, or until they are golden and crispy. Drain on paper towels and season with salt.

2. Cook the Mussels:
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the shallots and garlic, and cook until softened, about 3-4 minutes.
3. Pour in the white wine and broth, then add the parsley, thyme, bay leaf, salt, and pepper. Bring to a simmer.
4. Add the mussels to the pot, cover with a lid, and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.
5. Use tongs to transfer the mussels to a large bowl, leaving the broth in the pot.

3. Serve:
1. Pour the remaining broth over the mussels.
2. Serve the mussels hot, accompanied by the crispy frites.
