Ingredients:

  • 1 pre-made pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions:

1. Preheat the oven to 375°F (190°C) and line a baking sheet with a silicon baking mat.

2. Roll out the pie crust using a rolling pin on a lightly floured cutting board and use a round cookie cutter to cut out small circles that will fit into a mini muffin tin.

3. Place each circle into the mini muffin tin cups, pressing gently to form a crust.

4. In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until smooth.

5. Add in the grated cheddar cheese, diced ham, and chopped spinach, mixing well with a whisk.

6. Carefully pour the egg mixture into each crust-lined cup, filling them about three-quarters full.

7. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the filling is set.

8. Remove the mini quiches from the oven and let them cool slightly on a cooling rack before serving.

  • For a vegetarian version, omit the ham and add more vegetables like mushrooms, bell peppers, or onions.
