Mexican Tamales

Tamales are a traditional Mexican dish with deep cultural roots, often enjoyed during holidays and celebrations. Constructed from masa (corn dough) and filled with a variety of ingredients, such as meats, cheeses, or vegetables, tamales are wrapped in corn husks and steamed. Their history dates back to ancient Mesoamerican cultures, and today, they remain a beloved comfort food, symbolizing community and family gatherings.

Ingredients:

  • 4 cups masa harina
  • 3 cups chicken broth
  • 1 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups cooked, shredded chicken
  • 1 cup salsa verde
  • 24 dried corn husks
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions:

1. Soak the corn husks in warm water in a large pot for boiling for about 30 minutes until soft.

2. Mix masa harina, baking powder, and salt in a mixing bowl. Gradually add chicken broth, stirring with a wooden spoon until a dough forms.

3. Beat lard or shortening in a separate bowl until fluffy using a wooden spoon. Integrate it into the masa mixture until smooth.

4. Combine shredded chicken, salsa verde, cumin, and chili powder in another mixing bowl.

5. Spread 2 tablespoons of masa dough onto the center of each soaked corn husk, using a spatula.

6. Place 1 tablespoon of the chicken filling in the center of the masa.

7. Fold the sides of the husk in towards the center and then fold the bottom of the husk up.

8. Arrange tamales upright in a steamer. Steam for 1 to 1.5 hours, adding water as necessary, until masa is firm.

9. Remove tamales from the steamer carefully and let cool for a few minutes before serving.


Tips and Suggestions:

  • For a vegetarian version, replace the chicken with sautéed mushrooms or cheese.
  • Add roasted jalapeños for extra spice.
  • Keep extra broth on hand to adjust the masa consistency if it’s too dry.

Serving Suggestions:

Serve with a side of black beans and rice, and garnish with fresh cilantro and lime wedges for added flavor.
