Instructions

  1. Begin by rinsing the rice under cold water using a fine mesh strainer until the water runs clear. This step helps remove excess starch and prevents the rice from becoming sticky.
  2. If using a rice cooker, combine the rinsed rice, 2 cups of water, and 1 tablespoon of oil in the cooker. If using a saucepan, add the rinsed rice, 2 cups of water, and 1 tablespoon of oil to the pan and bring to a boil over medium-high heat.
  3. Once the water in the saucepan reaches a boil, reduce the heat to low, cover the pan with a lid, and simmer for 18-20 minutes, or until the rice is tender and the water has been fully absorbed. If using a rice cooker, simply press the cook button and let it cook until it switches to the “warm” setting.
  4. While the rice is cooking, zest and juice the lime. Set aside.
  5. When the rice is done, fluff it with a fork to separate the grains.
  6. Add the lime zest, lime juice, and salt to the rice and mix well to combine.
