Ingredients
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon olive oil or vegetable oil
- 1 lime (juiced and zested)

- 1/4 cup fresh cilantro (chopped)
Instructions
- Begin by rinsing the rice under cold water using a fine mesh strainer until the water runs clear. This step helps remove excess starch and prevents the rice from becoming sticky.
- If using a rice cooker, combine the rinsed rice, 2 cups of water, and 1 tablespoon of oil in the cooker. If using a saucepan, add the rinsed rice, 2 cups of water, and 1 tablespoon of oil to the pan and bring to a boil over medium-high heat.
- Once the water in the saucepan reaches a boil, reduce the heat to low, cover the pan with a lid, and simmer for 18-20 minutes, or until the rice is tender and the water has been fully absorbed. If using a rice cooker, simply press the cook button and let it cook until it switches to the “warm” setting.
- While the rice is cooking, zest and juice the lime. Set aside.
- When the rice is done, fluff it with a fork to separate the grains.
- Add the lime zest, lime juice, and salt to the rice and mix well to combine.
- Stir in the chopped cilantro until evenly distributed throughout the rice.
- Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
