Ingredients
1 cup fine bulgur wheat
2 cups finely chopped fresh parsley (about 2 bunches)
1/2 cup finely chopped fresh mint leaves
4 medium tomatoes, finely diced
1 small onion, finely chopped
3-4 green onions, finely chopped
1/2 cup extra virgin olive oil
1/4 cup freshly squeezed lemon juice (more to taste)
1 tsp salt (more to taste)
1/2 tsp black pepper
Instructions
Prepare Bulgur: Place the bulgur wheat in a small bowl and cover it with boiling water. Let it sit for about 15-20 minutes until it’s tender and has absorbed the water. Drain any excess water using a fine mesh strainer or colander.
Chop Vegetables: While the bulgur is soaking, finely chop the parsley, mint, tomatoes, onion, and green onions. Ensure the vegetables are chopped finely for the best texture.
Combine Ingredients: In a large mixing bowl, combine the drained bulgur wheat, chopped parsley, mint, tomatoes, onion, and green onions.
Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour this dressing over the salad ingredients in the large mixing bowl.
Mix Well: Toss everything together until all the ingredients are well combined and evenly coated with the dressing.
Adjust Seasoning: Taste the tabouleh and adjust the seasoning with more salt, pepper, or lemon juice as desired.
Chill and Serve: For the best flavor, let the tabouleh sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
