  • 1 block of firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup jasmine or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup kimchi
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

For Korean BBQ Sauce:

  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine soy sauce, sesame oil, and cornstarch. Add the cubed tofu and gently toss to coat.
  3. Spread the tofu cubes evenly on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  4. While the tofu is baking, cook the rice according to package instructions in a rice cooker or saucepan.
  5. Prepare the Korean BBQ sauce by whisking together gochujang, soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl. Set aside.
  6. Heat vegetable oil in a non-stick skillet over medium heat. Add the baked tofu and pour in the Korean BBQ sauce. Toss to coat the tofu evenly and cook for 3-5 minutes, allowing the sauce to thicken slightly.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Top with Korean BBQ tofu, shredded carrots, sliced cucumber, and kimchi.
