Ingredients
- 1 block of firm tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 cup jasmine or brown rice
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 cup kimchi
- 2 green onions, sliced
- 1 tablespoon sesame seeds
For Korean BBQ Sauce:
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine soy sauce, sesame oil, and cornstarch. Add the cubed tofu and gently toss to coat.
- Spread the tofu cubes evenly on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- While the tofu is baking, cook the rice according to package instructions in a rice cooker or saucepan.
- Prepare the Korean BBQ sauce by whisking together gochujang, soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl. Set aside.
- Heat vegetable oil in a non-stick skillet over medium heat. Add the baked tofu and pour in the Korean BBQ sauce. Toss to coat the tofu evenly and cook for 3-5 minutes, allowing the sauce to thicken slightly.
- To assemble the bowls, divide the cooked rice among serving bowls. Top with Korean BBQ tofu, shredded carrots, sliced cucumber, and kimchi.
