  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (110°F/45°C)
  • 1/4 cup olive oil (plus extra for greasing and topping)
  • 1 tsp sugar
  • 2 tsp salt
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
  • Coarse sea salt, for topping

Instructions

  1. Activate Yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until the mixture becomes frothy.

  2. Mix Dough: In the bowl of a stand mixer, combine the flour and 2 tsp of salt. Add the yeast mixture and 1/4 cup of olive oil. Using the dough hook attachment, mix on low speed until the dough starts to come together, then increase to medium speed and knead for about 5-7 minutes until the dough is smooth and elastic.

  3. First Rise: Transfer the dough to a lightly oiled large mixing bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.

  4. Prepare Baking Sheet: Line a baking sheet with parchment paper and drizzle with olive oil. Spread the oil evenly over the surface.

  5. Shape Dough: Once the dough has risen, punch it down to release the air. Transfer it to the prepared baking sheet and use your fingers to gently press and stretch the dough to fit the pan.

  6. Second Rise: Cover the dough with a kitchen towel and let it rise for another 30 minutes.

  7. Preheat Oven: While the dough is rising, preheat your oven to 425°F (220°C).

  8. Add Toppings: After the second rise, use your fingers to make dimples all over the surface of the dough. Brush the top generously with olive oil, sprinkle with chopped rosemary and coarse sea salt.

  9. Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes or until the focaccia is golden brown and crispy on the edges.
