  • 4 cups chopped Romaine lettuce
  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, peeled and sliced
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, seeded and sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice

Instructions

  1. On a cutting board, chop the Romaine lettuce, halve the cherry tomatoes, peel and slice the cucumber, thinly slice the red onion, and seed and slice the green bell pepper.
  2. Place the chopped Romaine lettuce in a large mixing bowl.
  3. Add the cherry tomatoes, cucumber slices, red onion slices, green bell pepper slices, and Kalamata olives to the bowl.
  4. Sprinkle the crumbled feta cheese over the salad.
  5. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper to make the dressing.
  6. Pour the dressing over the salad and toss gently with salad tongs or a large spoon to combine.
