  • 2 tbsp olive oil
  • 1 large onion, sliced

  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper (optional, for heat)

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C).

  2. Prepare Pork: In a small bowl, mix together the paprika, chili powder, cumin, black pepper, salt, and cayenne pepper. Rub this spice mixture all over the pork shoulder.

  3. Sear Pork: Heat the olive oil in the Dutch oven over medium-high heat. Add the pork shoulder and sear on all sides until browned, about 3-4 minutes per side. Remove the pork from the Dutch oven and set aside.

  4. Cook Aromatics: Add the sliced onion to the Dutch oven and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
