  • 1 teaspoon black pepper

Instructions:

  1. Wash the collard greens thoroughly to remove any dirt or grit. Use a cutting board and sharp knife to remove the tough stems and chop the leaves into bite-sized pieces.

  2. Heat a large cast iron skillet over medium heat and add olive oil. Add the diced onion and minced garlic, sautéing until translucent.

  3. Add the smoked ham hock or bacon to the skillet and cook until browned, releasing the smoky flavor.

  4. Transfer the mixture to a large pot for boiling and add the chicken broth. Bring to a simmer.

  5. Stir in the chopped collard greens, salt, black pepper, and red pepper flakes. Use a wooden spoon to combine the ingredients.

  6. Simmer the greens on low heat for about 45 minutes to 1 hour, or until they are tender and flavorful.

  7. Remove the ham hock (if using) and shred any meat to return it to the pot. Stir in the apple cider vinegar to enhance the flavor.

  • For a vegetarian version, replace the chicken broth with vegetable broth and omit the smoked meat. You can add smoked paprika for a smoky flavor.
