Servings: Serves 10-12 people

Appliances/Utensils:

Ingredients:

  • 1 whole turkey (12-14 pounds), thawed
  • 1 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 lemon, halved
  • 1 onion, quartered
  • 2 cups chicken broth

Instructions:

1. Preheat your oven to 325°F (165°C).

2. Prepare the herb butter by mixing the softened butter, rosemary, thyme, sage, garlic, salt, and pepper in a mixing bowl.

3. Pat the turkey dry with paper towels. Using your hands, gently separate the skin from the breast meat and spread half of the herb butter under the skin.

4. Rub the remaining herb butter over the entire exterior of the turkey.

5. Stuff the cavity with lemon halves and onion quarters.

6. Place the turkey on a roasting pan with rack and pour the chicken broth into the pan.

7. Roast the turkey in the preheated oven, basting occasionally with the juices using a pastry brush, until the thermometer inserted into the thickest part of the thigh reads 165°F (75°C), approximately 3 to 3.5 hours.

8. Remove the turkey from the oven and let it rest for at least 30 minutes before carving.

Tips and Suggestions:

  • For an extra crisp skin, leave the turkey uncovered in the refrigerator overnight to dry out the skin before roasting.

  • If you have any dietary restrictions, consider using a dairy-free butter substitute for the herb butter.

  • Add additional herbs such as parsley or marjoram for a unique flavor twist.

Serve with mashed potatoes, stuffing, and cranberry sauce for a complete holiday meal. Garnish with additional fresh herbs for a festive touch.
