Korean BBQ Tacos are a delightful fusion of Korean flavors and Mexican cuisine. They typically consist of tortillas filled with Korean-style grilled meats such as bulgogi (marinated beef) or dak galbi (spicy chicken), complemented by a mix of fresh and pickled vegetables, and topped with spicy or tangy sauces. This dish is perfect for those who love a combination of sweet, savory, and spicy tastes, all wrapped up in a soft tortilla.
Ingredients:
- For the Meat:
- 500g beef (sirloin or rib-eye), thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons pear juice (or grated pear)
- 1 tablespoon rice wine
- 1 onion, thinly sliced
- 1 green onion, chopped
- 1 teaspoon black pepper
- For the Slaw:
- 1 cup cabbage, shredded
- 1 carrot, julienned
- 1/2 cucumber, julienned
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- Salt, to taste
- For the Tacos:
- 8-10 small flour tortillas or corn tortillas
- Optional toppings: sesame seeds, cilantro, lime wedges, hot sauce
Appliances and Special Utensils:
- Grill or grill pan
- Mixing bowls
- Garlic press (optional for mincing garlic)
- Julienne peeler or sharp knife (for preparing vegetables)
- Tongs
- Measuring spoons and cups
Recipe:
- Marinate the Meat:
- In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, pear juice, rice wine, chopped onion, green onion, and black pepper.
- Add the thinly sliced beef to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.
- Prepare the Slaw:
- In another bowl, mix the shredded cabbage, julienned carrot, and cucumber.
- Whisk together rice vinegar, sugar, and a pinch of salt until the sugar dissolves. Pour this dressing over the vegetables and toss to coat evenly. Set aside to marinate.
- Cook the Meat:
- Preheat your grill or grill pan over medium-high heat.
- Remove the beef from the marinade, shaking off any excess. Grill the beef slices for 2-3 minutes on each side or until nicely charred and cooked through. Transfer to a plate and keep warm.
- Warm the Tortillas:
- Heat the tortillas on the grill or a dry skillet for about 30 seconds on each side until warm and slightly charred.
- Assemble the Tacos:
- Place a few slices of grilled beef on each tortilla. Top with a generous amount of slaw.
- Garnish with sesame seeds and cilantro if desired. Serve with lime wedges and hot sauce on the side for an extra kick.
