Crispy Breaded Zucchini is a delightful appetizer or side dish that highlights the versatility of zucchini, a staple in many cuisines worldwide. Ingredients:
– 2 medium zucchinis
– 1 cup all-purpose flour
– 2 large eggs
– 1 cup breadcrumbs
– ½ cup grated Parmesan cheese
– 1 teaspoon garlic powder
– 1 teaspoon dried oregano
– ½ teaspoon salt
– ½ teaspoon black pepper
– Olive oil, for frying


Instructions:

  1. Slice the zucchinis into ¼-inch thick rounds using a Sharp knife on a Cutting Board.

  2. Prepare three Shallow bowls / pans. Place flour in the first, beat the eggs in the second, and mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper in the third.

  3. Coat each zucchini slice by first dredging it in flour, then dipping it in the egg, and finally coating it with the breadcrumb mixture. Use Kitchen tongs for ease.

  4. Heat a generous amount of olive oil in a Large frying pan over medium heat.

  5. Fry the zucchini slices in batches, ensuring they do not overcrowd the pan. Cook each side for about 3-4 minutes until golden brown.

  6. Remove the zucchini slices from the pan with a Spatula and place them on a Cooling rack to drain excess oil.


Tips and Suggestions:
– For a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture.
– To make this dish gluten-free, substitute the all-purpose flour and regular breadcrumbs with their gluten-free counterparts.
