Ingredients:

  • 8 cups chicken broth
  • 4 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon sesame oil
  • 1-inch piece of ginger, sliced
  • 4 cloves garlic, minced
  • 4 packs of ramen noodles
  • 4 soft-boiled eggs
  • 1 cup sliced mushrooms
  • 1 cup chopped green onions
  • 1 cup bean sprouts
  • 1 sheet nori, cut into strips
  • Salt and pepper to taste

Instructions:

1. Boil the chicken broth and water in a large pot.

2. Add soy sauce, miso paste, sesame oil, ginger, and garlic to the pot. Simmer for 20 minutes.

3. Strain the broth using a fine mesh strainer to remove solids, then return it to the pot.

4. Bring the broth back to a simmer. Add mushrooms and cook for 5 minutes.

5. Cook the ramen noodles according to package instructions in a saucepan, then drain.

6. Divide the noodles among four bowls.

7. Ladle the broth over the noodles using a ladle.

8. Top each bowl with a soft-boiled egg, green onions, bean sprouts, and nori strips.

9. Season with salt and pepper to taste.
