Pork Fried Rice

Pork Fried Rice is a beloved dish in many Asian cuisines, especially Chinese, where it is often a way to use leftovers creatively. Combining savory pork, aromatic rice, and a colorful array of vegetables, it offers a delightful balance of flavors and textures. Ingredients:

  • 2 cups cooked jasmine rice (preferably cold)
  • 1 tablespoon vegetable oil
  • 1/2 pound pork loin, thinly sliced
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions:

1. Heat a wok over medium-high heat and add the vegetable oil.

2. Add the sliced pork loin to the wok and stir-fry until browned and cooked through, about 4-5 minutes. Remove the pork from the wok and set aside.

3. In the same wok, pour in the beaten eggs and scramble quickly. Once cooked, add them to the pork.

4. Increase the heat to high and add the cooked jasmine rice to the wok. Stir-fry for 2-3 minutes, breaking up any clumps.

5. Add the peas and carrots to the rice and stir well, cooking for another 2 minutes.

6. Return the pork and scrambled eggs to the wok. Add the soy sauce and sesame oil, stirring to combine all ingredients.

7. Season the fried rice with salt and pepper to taste. Toss in the chopped green onions and mix well with a wooden spoon/ladle before serving.


Tips and Suggestions:

  • For a spicier kick, add a dash of chili sauce or sriracha.
  • Substitute the pork with chicken, shrimp, or tofu to suit your preference.
  • Use day-old rice for the best texture; fresh rice tends to be too soft and sticky.
