  • Crust:

  • Topping:
    • 1 egg yolk
    • 1 tablespoon milk

Instructions:

1. Prepare the crust by combining flour, salt, and sugar in a mixing bowl.

2. Cut in butter with a sharp knife until the mixture resembles coarse crumbs.

3. Stir in ice water, a tablespoon at a time, until the dough holds together. Divide the dough in half, shape into balls, and wrap each in plastic. Refrigerate for at least 30 minutes.

4. Roll out one half of the dough on a floured cutting board with a rolling pin. Fit into a 9-inch pie plate.

5. Preheat your oven to 425°F (220°C).

6. To make the filling, combine apples, sugar, flour, cinnamon, nutmeg, and lemon juice in a mixing bowl. Mix well to coat the apples.

7. Pour the apple mixture into the pastry-lined pie plate. Dot with butter.

8. Roll out the second half of the dough and place over the filling. Seal and flute the edges. Cut slits in the top to allow steam to escape.

9. Mix egg yolk and milk in a small bowl. Brush the mixture over the crust using a pastry brush.

10. Place the pie on a baking sheet and bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and bake for 35 to 45 minutes, or until the apples are soft and the crust is golden brown.

11. Allow the pie to cool on a cooling rack before serving.
