Beef Empanadas

Beef empanadas are a staple in many Latin American countries, celebrated for their savory fillings encased in flaky pastry. Originating from Spain and adapted by various cultures, empanadas are enjoyed as a snack or meal due to their portability and satisfying flavors. Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup green olives, sliced
  • 1 hard-boiled egg, chopped
  • 1 package of empanada dough or 12 empanada discs
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Heat the olive oil in a large frying pan over medium heat.

  2. Add the onion and garlic to the pan and sauté until the onion becomes translucent.

  3. Stir in the ground beef, breaking it up with a wooden spoon, and cook until browned.

  4. Mix in the cumin, paprika, salt, and pepper, and cook for an additional 2 minutes to incorporate the spices.

  5. Remove the pan from heat and allow the mixture to cool slightly before adding the olives and chopped hard-boiled egg.

  6. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  7. Roll out the empanada dough using a rolling pin if necessary, and spoon about 2 tablespoons of the beef mixture into the center of each disc.

  8. Fold the dough over the filling to create a half-moon shape, pressing the edges with a fork to seal them.

  9. Brush the tops of the empanadas with the beaten egg using a pastry brush.

  10. Place the empanadas on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
