Servings: Serves 4 people

Appliances/Utensils:

Ingredients:

  • 1 large cauliflower head, cut into florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Buffalo sauce
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled blue cheese (optional)
  • Lime wedges for serving

Instructions:

1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.

3. Dip each cauliflower floret into the batter, ensuring it is fully coated, and place it on the prepared baking sheet.

4. Bake the cauliflower in the preheated oven for 20 minutes, turning halfway through, until they are golden brown and crispy.

5. While the cauliflower bakes, heat a large frying pan over medium heat and warm the tortillas for about 30 seconds on each side. Keep them warm by wrapping them in a clean kitchen towel.

6. Once the cauliflower is done, remove it from the oven and toss the florets in the Buffalo sauce using a mixing bowl.

7. Assemble the tacos by placing a few Buffalo cauliflower pieces on each tortilla, then top with shredded lettuce, diced tomatoes, chopped cilantro, and blue cheese if using.

8. Serve immediately with lime wedges on the side for extra zest.

Tips and Suggestions:

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • Adjust the heat level by choosing a milder or hotter Buffalo sauce according to your preference.
  • Add sliced avocado or a dollop of vegan sour cream for extra creaminess.

Serving Suggestions:

Serve the tacos with a side of black bean salad or a simple corn salsa to complement the flavors.
