Ingredients

For the Hummus:
– 1 can (15 oz) chickpeas, drained and rinsed
– 1/4 cup fresh lemon juice (about 1 large lemon)
– 1/4 cup tahini
– 1 small garlic clove, minced
– 2 tablespoons olive oil, plus more for serving
– 1/2 teaspoon ground cumin
– Salt to taste
– 2 to 3 tablespoons water

For the Veggie Platter:
– 1 cup cherry tomatoes
– 1 cucumber, sliced
– 2 carrots, peeled and sliced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 cup sugar snap peas

Instructions

1. In a food processor or blender, combine the chickpeas, lemon juice, tahini, minced garlic, olive oil, cumin, and salt. Blend until smooth.

2. With the processor running, add water, one tablespoon at a time, until you reach the desired consistency for your hummus.

3. Taste and adjust the seasoning, adding more salt or lemon juice if needed.

4. Transfer the hummus to a serving bowl and drizzle a little olive oil on top. Set aside.

5. Prepare the vegetables by washing and slicing them as needed using a sharp knife.

6. Arrange the sliced cucumber, carrots, bell peppers, cherry tomatoes, and sugar snap peas around the serving bowl of hummus on a large platter.
