Appliances and Special Utensils

Ingredients

  • 1 lb fresh sea scallops
  • 2 tbsp butter
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1 tbsp all-purpose flour
  • 1/4 cup Gruyère cheese, grated
  • 1/4 cup breadcrumbs
  • 2 tbsp parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Scallops: Pat the scallops dry with a paper towel and season with salt and pepper.

  3. Cook Scallops: In a large frying pan, melt 1 tablespoon of butter over medium-high heat. Add the scallops and sear until golden brown on each side, about 2-3 minutes per side. Remove scallops from the pan and set aside.

  4. Cook Aromatics: In the same pan, add the remaining butter. Sauté the shallots and garlic until translucent, about 2 minutes. Add the mushrooms and cook until they release their juices and become tender, about 5 minutes.

  5. Deglaze Pan: Pour in the white wine, stirring to deglaze the bottom of the pan. Allow the wine to reduce by half, about 3-4 minutes.

  6. Make Sauce: Sprinkle the flour over the mushroom mixture and stir to combine. Gradually add the heavy cream, whisking continuously until the sauce thickens. Season with salt and pepper to taste.

  7. Assemble Dish: Arrange the scallops in a baking dish or individual scallop shells. Pour the mushroom sauce over the scallops.

  8. Add Toppings: In a mixing bowl, mix together the breadcrumbs, grated Gruyère cheese, and chopped parsley. Sprinkle this mixture over the scallops and sauce.

  9. Bake: Transfer the baking dish or scallop shells to the preheated oven. Bake for 10-15 minutes, or until the top is golden brown and bubbling.

  10. Serve: Remove from the oven and let cool slightly. Serve with lemon wedges on the side. Enjoy your delicious, homemade French Coquilles Saint-Jacques!
