Instructions

  1. Prepare Ingredients: Begin by cooking the bacon in a medium saucepan over medium heat until crispy. Remove with a slotted spoon and place on paper towels to drain. Hard boil the eggs by placing them in boiling water for 10-12 minutes, then cool in an ice bath before peeling and chopping. Dice the cooked chicken breast, avocado, and halve the cherry tomatoes.

  2. Make the Dressing: In a small mixing bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined. Adjust seasoning to taste.

  3. Assemble the Salad: In a large salad bowl, lay down a bed of chopped romaine lettuce. Arrange the diced chicken, crumbled bacon, chopped eggs, diced avocado, halved cherry tomatoes, crumbled blue cheese, red onion slices, and chopped chives (if using) in neat rows on top of the lettuce.
