  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped

  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 2 cups chicken broth (or water)
  • 1 bay leaf
  • 1 cup mixed vegetables (optional, peas and carrots)
  • Grilled or fried chicken (optional, for serving)

Instructions

  1. Prepare Ingredients: Rinse the rice in cold water until the water runs clear. Set aside. Blend the diced tomatoes, red bell pepper, and half of the chopped onion in a blender or food processor until smooth.

  2. Cook Aromatics: Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the remaining chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

  3. Add Tomato Mixture: Pour the blended tomato mixture into the pot. Stir in the tomato paste, thyme, curry powder, paprika, black pepper, and salt. Cook for 10-15 minutes, stirring occasionally, until the mixture reduces and the oil begins to separate from the sauce.

  4. Add Broth and Rice: Add the chicken broth (or water) and bay leaf to the pot. Bring to a boil. Stir in the rinsed rice, ensuring it is evenly distributed in the pot. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes.

  5. Add Vegetables: If using mixed vegetables, add them to the pot about 10 minutes before the rice is fully cooked. Continue to cook until the rice is tender and has absorbed the liquid, and the vegetables are cooked through.
